Sweet potato

The sweet potato is a tuber with orange flesh (sometimes white or purple) that is soft and slightly sweet. Rich in complex carbohydrates, fibre and beta-carotene, it differs from the potato in its more moderate glycaemic index and its high antioxidant content. Tender and versatile, it is a healthy, filling cross between a starchy food and a vegetable.
