Nutritional benefits

An omelette is a quick, inexpensive source of complete protein. Filled with vegetables or herbs, it makes a light, balanced meal. Use very little fat and a non-stick pan to keep it lighter.

Variations and swaps

  • With mushrooms, cheese, ham.
  • With fines herbes.
  • With vegetables (frittata-style).
  • Egg whites only (lighter).

Storage and making ahead

Best eaten freshly cooked; you can have it cold in a sandwich the next day.

💡 Good to know

Cook over a medium heat and take it off when the centre is still glossy: the omelette finishes setting on the plate and stays soft.
