Liver sausage combines pork liver and fat in a casing, often smoked. It is a cold meat from the north and east of France, and the liver completely changes its micronutrient profile.

Tips
58 µg of selenium: it covers the reference intake. Selenium is concentrated in the liver, and European soils are poor in it: this is a real contribution that few common foods offer.
But 35.9 g of fat for 11.7 g of protein. The ratio is very unfavourable: liver sausage is first and foremost a fat. A 40 g slice provides 150 kcal.
5.3 mg of iron, or 38% of the reference intake. Well-absorbed haem iron, as in all liver or blood products. See black pudding, which is three times richer still.
It contains liver, so take care in pregnancy. Its 102 µg of vitamin A is still moderate, but the content varies with the proportion of liver. Pregnant women should limit all liver-based products.
It counts towards the processed meat guideline. 150 g a week, all products combined. And 2.03 g of salt per 100 g means you should not add salt to what goes with it.
