Tips

It is lower in starch than a storage potato. Harvested young, it contains more water and less starch: its glycaemic index is lower, and it holds its shape better when cooked.

Do not peel it. Its skin is so thin that scrubbing under water is enough. That is where the fibre is, and peeling makes no sense.

367 mg of potassium for 76 kcal. A good ratio: the potato is one of the main sources of potassium in the French diet, because people eat it in quantity.

It does not keep. A week at most, in the dark and cool. Its immature skin does not protect it like that of a main-crop potato.

If sprouted or green, throw it away. Solanine develops with light and with sprouting; it is toxic and survives cooking. This is true of all potatoes.
