Nutritional benefits

Variations and swaps
- With pistachio.
- With red berries (one berry on top).
- Chocolate.
- Hazelnut (ground hazelnuts).
Storage and making ahead
Keep for 4 days in a tin and freeze well; at their softest on the day.
💡 Good to know
The brown butter makes the flavour: let it colour until it smells of hazelnuts, which is what sets a financier apart from a simple almond cake.
