Tips

21 kcal: one of the least energy-dense foods in our database. With 2.11 g of protein, which is notable for something so light. Mushrooms have a place of their own, neither vegetable nor starchy food.

Do not soak them. They absorb water like a sponge and release it during cooking, so they boil instead of browning. A damp cloth or a quick rinse is enough.

Very hot pan, a few at a time. That is the rule: too many mushrooms at once lower the temperature and they release their water. In small batches, they brown and concentrate their flavour.

Exposed to sunlight, they produce vitamin D. This is a genuine feature of mushrooms: their ergosterol turns into vitamin D2 under UV. Some producers use this process and say so on the packaging.

Raw in a salad, they are excellent. Sliced very thinly with lemon, which stops them blackening, and a drizzle of olive oil.
