Golden Delicious apple

The Golden apple is the most widely grown variety in France. Born by chance in West Virginia in the late 19th century, its yellow, sweet and low-acid flesh made it the reference apple, sometimes criticised for its blandness.

Tips

It is the sweetest of the apples in this selection. 11.5 g of sugars per 100 g, ahead of the Granny Smith at 10.1 g. The gap remains modest: a 150 g portion means 17 g of sugars against 15.

It holds up well when cooked. Its flesh does not fall apart completely: it suits tarts and baked apples, where other varieties turn to compote.

Do not peel it. These values include the skin, and that is where the fibre and polyphenols are concentrated. Peeled, an apple loses a large part of its value.

Residues: apples are heavily treated. They regularly top European surveys. If you eat the skin, and you should, careful washing or organic fruit is particularly justified here.

It keeps for months in cold storage. That is why you can find it all year round. A Golden from April has much less flavour than a Golden from October, without its composition really changing.
