Andouillette
Andouillette is a French sausage made from pork chitterlings (the small intestine) cut into strips, seasoned and stuffed into a casing. It is a tripe butcher’s product, not a regular butcher’s one, which explains its make-up: little muscle, plenty of connective tissue and offal.

Tips
One andouillette weighs 150 g: count on 338 kcal. It is a main course, not a starter. Grilled with no added fat (it releases plenty of its own), it stays within reasonable limits.
It is less fatty than most sausages. 16.3 g of fat, against 27.3 g for a Montbéliard sausage. Its heavy reputation comes from the taste, not the numbers.
Cholesterol is its particular point. 284 mg per 100 g, a level typical of offal. Its effect on blood cholesterol is small for most people, but the figure sets andouillette apart from other cured meats.
It is still a processed meat product. The French national nutrition and health programme guideline of 150 g of charcuterie a week, all products combined, is reached with a single andouillette. That is the framework to keep in mind.
AAAAA is not an official label. The Association amicale des amateurs d’andouillette authentique is a club of food enthusiasts, not a certification. The only reliable criteria are the words “pure pork” and a short ingredients list.
