Tips

23.3 g of protein for 0.5 g of fat: an exceptional ratio. It is one of the leanest and most protein-rich fish in the whole database, and one of the cheapest on the counter.

Mercury: it is still a shark. Less concentrated than in a large shark, because it lives for less time, but caution is still advised for pregnant women and young children.

It has no bones. Its skeleton is cartilage: that makes it an excellent fish for children, as long as you manage the mercury question through frequency.

Its flesh holds up to slow cooking. It is the traditional base for rock salmon in mustard or white wine sauce. Allow fifteen minutes, no more: it turns stringy.

An ammonia smell: the sign to know. Like all cartilaginous fish, it excretes urea through its skin. When fresh, it smells of nothing.
