Tips
Thin or thick, the difference is real. A thin dough comes to around 285 kcal per 100 g, a standard dough around 240 raw but in a larger quantity: it is the total weight of dough that decides, not its density.
Salt. 1.3 g per 100 g, to which you add the sauce, the cheese and the cured meats. The dough is not the main contributor to a pizza’s salt, but it is not neutral either.
Homemade. A homemade dough needs only four ingredients and lets you use semi-wholemeal flour, which doubles the fibre without changing the taste once it is topped.
