Rusks (biscotte)

The biscotte is sliced bread baked twice (bis cocta) until almost all its water has evaporated. This dehydration is what makes it crisp, and what concentrates everything it contains.

Tips

402 kcal against 253 for bread: the gap is misleading. It is the water that is missing, not something added. A biscotte weighs 8 g, a slice of bread 30 g: per piece, the biscotte is lighter. The per-100 g table misleads.

The standard version is very salty. This one is « no added salt »; ordinary biscottes contain roughly two hundred times more. Check the label, as the difference is considerable.

Its glycaemic index is higher than that of bread. Double baking has broken down the starch. So it is not the « light » alternative to bread that people often imagine.

5.6 g of fibre: decent for a wheat product. Wholemeal versions go even higher, and that is the only criterion that genuinely improves the product.

It keeps for months. That is its purpose: no water, no mould. Keep it away from damp, otherwise it softens and loses all its appeal.
