Ingredients
Method
- Slice the cucumbers into half-moons.
- Crumble the feta and thinly slice the red onion.
- Chop the mint.
- Mix and dress with olive oil and lemon juice.
Nutritional benefits
Cucumber is over 95% water, which makes it a hydrating vegetable with almost no calories, ideal if you are watching your weight. Feta provides protein, calcium and flavour, and the mint freshness. A light, thirst-quenching salad that is low in carbohydrate.
Variations and substitutions
- With cherry tomatoes and olives (Greek style).
- With yoghurt for a tzatziki version.
- Vegan: leave out the feta and add seeds.
- With dill instead of mint.
Storage and preparing ahead
Best fresh; the cucumber releases water. Dress just before serving.
💡 Good to know
Salt the cucumber lightly and leave it to drain for 10 minutes before dressing: it stays crunchy and the salad does not end up swimming in water.
