Nutritional benefits

Meringue contains no fat: it is egg whites (pure protein) and sugar. It is still high in calories because of the sugar, so enjoy it in moderation, but it is the ideal way to use up egg whites without waste. Gluten-free.

Variations and substitutions

  • Coloured meringues.
  • With coconut.
  • As a pavlova (fresh fruit topping).
  • With cocoa.

Storage and making ahead

Keeps for 2 weeks in an airtight tin, away from moisture.

💡 Good to know

The sugar must be completely dissolved (the meringue no longer feels gritty between your fingers) before piping: this is the key to a smooth meringue that does not weep during cooking.
