Ingredients

Method

  1. Crumble the tofu with a fork to imitate scrambled eggs.
  2. Fry the sliced onion in the oil, then add the tofu and turmeric.
  3. Stir-fry for 5 to 7 minutes, until the tofu is lightly golden.
  4. Add the spinach at the end of cooking and season with black salt and pepper.

Nutritional benefits

Scrambled tofu is an excellent source of complete plant protein, low in saturated fat and cholesterol-free, which makes it an ideal savoury breakfast for vegans. Low in carbohydrate, it also suits a low-carb approach. Turmeric adds colour and anti-inflammatory properties, and kala namak black salt gives a surprising egg flavour thanks to its sulphur. Served with spinach and a slice of wholemeal toast, it is a filling, balanced meal.

Variations and substitutions

  • With vegetables: mushrooms, pepper, tomatoes.
  • “Omelette” style: add chickpea flour.
  • Spicier: nutritional yeast (cheesy flavour), smoked paprika.
  • As a filling for a wrap or on toast.

Storage and making ahead

Scrambled tofu keeps for 2 to 3 days in the fridge and reheats quickly in a frying pan: handy for a quick high-protein breakfast or plant-based meal prep.

💡 Good to know

Black kala namak salt is the secret ingredient that gives that convincing egg flavour: you can find it in Indian or health food shops. Press the tofu well beforehand so that it browns instead of boiling.
