A bright green, velvety soup that puts broccoli centre stage: light and rich in fibre and vitamin C, it makes a comforting dinner for weight loss. Creamy without any cream thanks to a potato, it also makes broccoli easier to enjoy, even for the most reluctant eaters.

Nutritional benefits

Broccoli is a remarkable cruciferous vegetable: very low in calories, it is rich in fibre, vitamin C, vitamin K and sulphur compounds studied for their protective effects. As a soup it becomes mild and creamy, which makes it easier to eat, including for children. The potato gives a silky texture without cream, keeping the dish light. It is a filling, green weight-loss dinner full of micronutrients.

Variations and substitutions

  • Higher in protein: a little soft cheese, red lentils or a poached egg.
  • More indulgent: a little goat’s cheese or some seeds.
  • Mixed: broccoli with courgette or with spinach.
  • Dairy-free: no dairy at all, just blended until smooth.

Storage and making ahead

This soup keeps for 3 to 4 days in the fridge and freezes well. Reheat gently. To keep a lovely green colour, do not overcook it and blend it as soon as it is done.

💡 Good to know

Do not throw away the broccoli stalk: peeled and chopped, it is just as tasty blended into the soup, and it cuts food waste. A short cooking time preserves the colour and the vitamins.
