Ingredients
Method
- Take the meat out 1 hour ahead so it comes up to room temperature.
- Sear it for 3 minutes on each side in a very hot frying pan.
- Finish in the oven for 15-20 minutes at 200 °C (depending on thickness).
- Rest for 10 minutes under a sheet of foil before slicing.
Nutritional benefits
Beef is an excellent source of protein, haem iron and zinc. A rib shared between several people stays a reasonable portion. Served with grilled vegetables and a salad rather than chips, it makes a balanced, festive meal.
Variations and swaps
- With herb butter.
- Barbecued.
- With a lighter pepper sauce.
- Garlic and rosemary marinade.
Storage and making ahead
Best freshly cooked; cold slices are good in a salad or sandwich.
💡 Good to know
Resting is essential: 10 minutes under foil after cooking lets the juices spread through the meat instead of running out when you carve.
