Ingredients
- 4 large onions
- 1 vegetable stock cube
- 1 tbsp butter
- 4 slices of bread
- 80 g grated cheese
Method
- Slice the onions and soften them gently for 20 minutes until caramelised.
- Add the stock and simmer for 20 minutes.
- Pour into bowls and top with the croutons and cheese.
- Grill for 5 minutes until golden and bubbling.
Nutritional benefits
Onion, rich in prebiotic fibre and antioxidants, is the star ingredient here, for very few calories. The gratinated soup stays reasonable if you keep an eye on the cheese. A satisfying, warming dish built around an everyday vegetable.
Variations and substitutions
- Without the cheese topping (lighter).
- Wholemeal bread for more fibre.
- With a splash of white wine in the stock.
- Made with Comté or Emmental.
Storage and making ahead
The onion broth keeps for 3 days; add the topping and grill just before serving.
💡 Good to know
The key is patience: really let the onions caramelise over a low heat for 20 minutes, as that is where all the flavour develops.
