Tips
It is clearly richer in beta-carotene than iceberg. It has 891 µg against 299 for an iceberg lettuce: the rule is simple, the darker the leaf, the more it contains.
The salad is never what weighs on the plate. It has 14.9 kcal per 100 g, against around 90 kcal for a tablespoon of oil. The dressing decides everything.
Its crunchy leaves hold the dressing. Unlike an oak leaf lettuce, which wilts, Batavia stands up to a vinaigrette a few minutes before serving, but no longer.
Really dry it. Leftover water dilutes the dressing and speeds up wilting. A salad spinner makes the difference between a decent salad and a bland one.
Keep the outer leaves. They are the darkest, so the richest in carotenoids and vitamin K, and they are the ones most often thrown away.
