Tips

3.5 g of fibre for 35 kcal: one of the best ratios in our database. This explains its filling power, much greater than its energy content suggests.

Raw, it keeps much more vitamin C. Finely grated in a salad with lemon, it keeps most of it. Cooked for a long time in water, it loses the greater part.

Fermented, it becomes a different food. Sauerkraut provides live lactic bacteria, provided it is raw and unpasteurised. The tinned kind no longer contains them.

Short cooking limits the sulphur compounds. They are what cause the smell and the bloating. Ten minutes of cooking at most, and change the water halfway through for sensitive stomachs.

It is very cheap and keeps for a long time. Whole and cool, a white cabbage lasts several weeks. Once cut, wrap the cut face in film and eat it within the week.
