Tips
157 kcal: the lightest of the prepared potatoes. Compare 242 for a dauphine potato. They are not fried, only browned in the oven: that is where the whole difference lies.
The 6.26 g of fat comes from the butter and the yolk. This is structural: without them, the rosette would not hold during cooking.
Homemade, they can be made with half the butter. The egg yolk is enough to hold them. A very dry mash, one yolk, a piping bag: the result is identical.
0.86 g of salt. A 150 g portion provides 1.3 g. As with all frozen preparations, do not add more salt.
Serve them with lean meat or fish. This is a rich side dish: pollock or a turkey escalope balance the plate well.
