Tips

It is lighter than Morteau. 322 kcal against 398, and 27.3 g of fat against 36.6 g. Its finer diameter holds proportionally less fat: for the same use, it is the better choice.

A sausage weighs 150 g: count 483 kcal. It is a main dish, to be served with lentils or potatoes and nothing else fatty.

Gentle poaching, no pricking. Twenty minutes in simmering, unsalted water. Boiling water makes the casing burst and the sausage empty its fat into the pan, which is the opposite of the aim.

2.33 g of salt per 100 g. One sausage provides 3.5 g, or 70% of the daily guideline. This is the point that deserves most attention with this product. See salt.

It counts towards the processed meat guideline. 150 g a week, all products combined, according to the Programme national nutrition santé.
