Brie de Meaux

Brie de Meaux is the « king of cheeses« , a title awarded at the Congress of Vienna in 1815. A raw-milk PDO cheese, ladled into the mould and matured for at least four weeks, it differs from industrial brie in having a supple paste that never runs, and a taste of fresh mushroom.

Tips

115 µg of vitamin B9 per 100 g. Nearly 60% of the reference intake: bloomy-rind cheeses are very rich in it, as the surface moulds produce it during maturing. Only Livarot does better in the database.

It is less fatty than an industrial Camembert. 20.7 g of fat, against more than 23 g for many soft cheeses. That is the opposite of what its creamy texture suggests.

2.02 g of salt, on the other hand. A 30 g portion provides 0.6 g. This is the point to watch with this cheese, more than the calories.

Do not eat it cold. Taken out an hour beforehand, its paste softens and woodland aromas appear. Straight from the fridge, a Brie de Meaux is no different from a supermarket brie.

Raw milk, without exception. The PDO requires it: it is not recommended for pregnant women or people with weakened immune systems. Generic pasteurised brie remains an option for them.
