Tips
19.3 g of sugars: one of the sweetest in the aisle. The caramel adds to the sugar in the custard. A 100 g pot provides almost four sugar cubes.
4.65 g of protein, on the other hand, is good. The egg and milk do the work, as with eggs in milk custard.
Homemade, the caramel can be measured. A spoonful in the bottom of the ramekin is plenty for flavour: industrial versions use far more, and that is where the sugar climbs.
Do not confuse it with flan pâtissier. The latter has a pastry case, which changes the numbers completely. Crème caramel has none.
It contains eggs and milk. And often flavourings; the ingredients list tells brands apart in two lines.
