Flan pâtissier (French custard tart)

The flan pâtissier is a custard mixture of eggs, milk, sugar and flour or starch, poured into a shortcrust pastry case and baked until the surface caramelises. It is the Parisian flan of French bakeries, not to be confused with crème caramel, which has no pastry.

Tips

A bakery slice weighs 130 g: count on 274 kcal. That is the real unit, and it is reasonable for a pastry, noticeably less than an éclair or a pain au chocolat.

33.2 g of carbohydrate: it is the pastry as much as the sugar. The custard supplies the sugars, the shortcrust pastry the starch. This is what sets the flan pâtissier apart from a crème caramel, which has no pastry.

The pastry explains the calorie gap. Eggs in milk custard is the same mixture without pastry: 124 kcal against 211. The whole difference lies there, and it is considerable.

Homemade, you can cut the sugar by a third. The custard sets thanks to the eggs and starch, not the sugar. A vanilla pod more than makes up for it in perceived sweetness.

It contains eggs, milk and gluten. Three major allergens. The version without pastry takes care of the gluten.
