Duck terrine

Duck terrine combines duck meat and liver, pork fat and aromatics, slowly cooked in a bain-marie. The liver makes it a product apart at the cold meat counter: its micronutrient values have no equivalent.

As for nutrition facts: 322 kcal per 100 g, with 27.1 g of fat and 13.2 g of protein. Its exceptional figures come from the liver: 4,350 µg of vitamin A, 13.6 µg of vitamin B12, 343 µg of vitamin B9, 5.2 mg of iron and 40 µg of selenium per 100 g. It contains 1.39 g of salt.

Tips

4,350 µg of vitamin A: that is five times the reference intake. A 40 g slice provides 1,740 µg. This concentration is specific to liver-based products, since liver is the organ where vitamin A is stored.

And it is not recommended in pregnancy. Vitamin A in the form of retinol is teratogenic above 3,000 µg a day: two slices of duck terrine are enough to pass that threshold. Pregnant women should avoid all liver-based products, terrine included.

13.6 µg of vitamin B12 and 343 µg of vitamin B9. Respectively five times and one and a half times the reference intakes. For someone who is not pregnant, an occasional slice is a real contribution.

A 40 g slice is worth 129 kcal. It is a starter, to be served with bread and gherkins rather than with a second fatty product.

Listeriosis: prefer the canned kind. An artisan terrine that has not been sterilised is a fresh product, to be eaten quickly and not recommended for pregnant women or people with weakened immunity.
