Tips
Its season is short: August and September. It is a fruit that does not travel well and does not keep. Out of season, what you find is either imported and tasteless, or another variety sold under the same name.
You can spot it by its tiny cracks. Contrary to intuition, a perfectly smooth greengage was picked too early. The small golden cracks signal a ripe fruit, and that is when it becomes exceptional.
69 kcal is above the average for fruit. It exceeds the pear and red berries. Nothing problematic, but a handful of plums weighs more than you think: allow 150 g, or four or five fruits, for a portion.
It has a mild laxative effect. Like all plums, because of its sorbitol and fibre, an effect that is multiplied when dried. Useful for constipation, but go easy if your digestion is already quick.
In a tart, it needs almost nothing. Its sugar content means you need very little sweetening: one spoonful is enough where a recipe calls for three. Use it on a shortcrust pastry base, with a little ground almond to absorb the juice.
