Tips
6.6 g of fat: much less than a dauphine. The latter has 15.7 g. The plain ball of mash, without choux pastry, explains the gap.
3.4 g of fibre: a good score. On a par with potato wedges, despite having no skin.
In the oven, with no added fat. They are part-cooked: fifteen minutes at 220 °C, turning them halfway. Adding oil does nothing for the crispness.
0.87 g of salt per 100 g. A 150 g portion provides 1.3 g. Do not add more salt at the table.
Children like them, and that is their appeal. At a comparable size and price, they are a better choice than a dauphine or a portion of chips.
