Malted yeast (nutritional yeast)
Malted yeast, or nutritional yeast, comes as golden flakes with a taste reminiscent of cheese and hazelnut. Highly prized in vegan cooking, it adds a « cheesy » touch without any dairy product. Rich in protein, fibre and often B vitamins, it is an essential healthy condiment.

Tips
Nutritional yeast is sprinkled, without cooking, over pasta, gratins, soups, salads and vegetable dishes for an umami taste. It replaces Parmesan in vegan versions of dishes such as quinoa risotto.
- Nutrition values: rich in plant protein and fibre; some versions are fortified with vitamin B12, which is valuable for vegans.
- Good to know: not to be confused with baker’s yeast or baking powder: it does not make things rise and is eaten as it is.
Store it in a dry place, away from light. For vegan and lactose-free diets, it is a valuable ally. See the Condiments & Sauces family.
