The Strasbourg sausage, or knack, is an Alsatian sausage of finely minced pork and beef, smoked then poached. Its name comes from the sound (knack) the natural casing makes when you bite into it.

Tips

25.9 g of fat for 12.4 g of protein. Fine mincing requires a fat-rich emulsion: it is structural, not accidental. Two sausages weigh 140 g, or 407 kcal.

Gentle poaching, never boiling. Ten minutes in water at 80°C, off the heat if necessary. In boiling water, the casing bursts and the sausage loses its juice, and the “knack” with it.

1.99 g of salt. Two sausages provide 2.8 g, or 56% of the daily guideline. On an already salty sauerkraut, the total soon mounts up. See salt.

It counts towards the processed meat guideline. 150 g a week, all products combined. Two knacks nearly use it up.

Natural casing or not: that is the test. A knack without a natural casing does not snap, and the whole point of the product disappears. The label says which.

Pregnant? Raw cured meats and cooked meats kept chilled are not recommended during pregnancy; anything cooked and served hot is allowed. See the list in our guide to cold meats and pregnancy.
