Tips
1.15 g of salt: among the lowest of the pressed cheeses. Half as much as a Cantal. A 30 g portion provides 0.35 g of salt, for 114 kcal.
26.1 g of protein is a great score. A 30 g portion provides 7.8 g. Savoyard uncooked pressed cheeses regularly rank near the top.
It is denser than a Tomme de Savoie. 381 kcal against 361, and more protein. Its PDO specification requires raw milk and a minimum of five weeks of maturing.
It melts well. In a croziflette, a gratin or melted over potatoes, it stands in for raclette with more character and a third less salt.
Raw milk. Not recommended for pregnant women or people with weakened immune systems, unless heated right through.
