Traditional chocolate mousse

Tips

Twice the usual chilled-aisle mousse. 319 kcal against 155 for the milk-based mousse, and four times as much fat. The name on the shelf does not let you tell them apart: only the nutrition table does.

One pot weighs 60 g: count on 191 kcal. It is a rich dessert, to be treated as such, and it is also much better.

7.23 g of protein and 2.74 g of fibre. The best scores in the aisle on both counts, thanks to the proportion of chocolate and eggs.

It often contains raw eggs. The whisked whites are not cooked in the traditional recipe. Industrial versions use pasteurised egg products; a homemade mousse made with raw eggs is not recommended for pregnant women and young children.

Homemade, dark chocolate is enough to sweeten it. With 70% dark chocolate and whisked egg whites, you can do without any added sugar altogether.
