Ingredients

Method

  1. Cut the beef into thin strips.
  2. Sear it very quickly over a high heat, then set aside.
  3. Stir-fry the vegetables with the garlic and spices.
  4. Return the beef to the pan, deglaze with the soy sauce and serve straight away.

Nutritional benefits

Lean beef provides protein, iron and zinc. Seared quickly with plenty of crunchy vegetables, it’s a balanced, quick, lactose-free dish. The spices add intense flavour without any added fat.

Variations and substitutions

  • With chicken or tofu.
  • Asian wok-style (ginger, sesame).
  • With seasonal vegetables.
  • On a bed of noodles.

Storage and making ahead

Best just cooked; keeps for 2 days and reheats quickly in a frying pan.

💡 Good to know

Sear the beef in several batches over a very high heat: too much meat at once lowers the temperature and the meat boils instead of browning.
