Ingredients

Method

  1. Cook the potatoes and slice them while still warm.
  2. Cut the herring into pieces and slice the onion thinly.
  3. Mix everything together.
  4. Dress with oil, vinegar and parsley.

Nutritional benefits

Herring is an oily fish, very rich in omega-3 and vitamin D, which are good for your heart and cholesterol, at a modest price. Potatoes provide carbohydrate and potassium. A complete, rustic salad meal, naturally gluten-free.

Variations and substitutions

  • With smoked mackerel.
  • With apples (sweet touch) in the Scandinavian style.
  • With dill instead of parsley.
  • With light cream for a Nordic version.

Storage and making ahead

Keeps for 2 days in the fridge and improves with time: the potatoes soak up the dressing.

💡 Good to know

Dress the potatoes while they are still warm: they absorb the dressing better and taste far more flavourful.
