Ingredients

Method

  1. Mix the beef with the chopped onion, spices and herbs.
  2. Shape into elongated patties around skewers.
  3. Grill for 10 minutes, turning them over.
  4. Serve with the yoghurt and mint sauce.

Nutritional benefits

Lean minced beef provides good-quality protein and iron, while the spices and herbs add flavour without calories. The yoghurt sauce replaces fatty sauces and adds freshness and calcium. A balanced, high-protein Middle Eastern dish, naturally gluten-free, to serve with a salad or couscous.

Variations and substitutions

  • With lamb or turkey.
  • Vegetarian: chickpea or lentil koftas.
  • Spicier: harissa, chilli.
  • In a pitta with raw vegetables.

Storage and making ahead

Keep for 3 days and can be frozen (raw or cooked). Reheat in the oven or in a frying pan.

💡 Good to know

Chill the koftas for 15 minutes before grilling: they hold together better and do not fall apart on the skewers.
