Nutritional benefits
Turkey is one of the leanest meats, very high in protein for few calories, ideal for weight loss and low-carb eating. The cured ham and sage add flavour without weighing the dish down. A fine, high-protein and light Italian dish, naturally gluten-free, to serve with vegetables.
Variations and substitutions
- With veal (the traditional version).
- With chicken.
- With spinach on the side.
- Alcohol-free: deglaze with stock.
Storage and making ahead
Best fresh; keeps for 2 days and reheats gently.
💡 Good to know
Start cooking ham side down so that it turns crisp and sticks to the escalope.
