Tips
The added cream shows in the figures. 25.2 g of fat for 13.1 g of protein: this is the most unbalanced ratio in this selection of soft cheeses. Saint-Marcellin, with no added cream, provides more protein for less fat.
One Saint-Félicien weighs 180 g. That is 506 kcal: a cheese to share between three or four, with bread and a salad.
50 µg of iodine per 100 g. A third of the reference intake, which is high for a cheese. Dairy products remain the second source of iodine in the French diet after seafood.
Its creaminess is the point. Runny when ripe, it can be eaten with a spoon and needs no rich accompaniment: no butter, no oil, just some wholemeal bread.
Raw or pasteurised milk. Saint-Félicien is not PDO, so both exist. Pregnant women should read the label.
