Tips

12.8 g of sugars: one of the least sweet in the aisle. A crème caramel has 19.3 g. Part of the carbohydrate in semolina pudding comes from the starch, not added sugar.

A 125 g pot is worth 165 kcal. It is a reasonable dessert, and it provides calcium and phosphorus that few desserts offer.

3.34 g of protein and 83.7 mg of calcium. The milk does the work: it is closer to a sweet dairy product than to a confectionery.

Homemade, it can be made with little or no sugar. Semolina, milk, a vanilla pod: the vanilla gives an impression of sweetness and lets you halve the sugar without anyone noticing.

It contains gluten. Wheat semolina is its base: not to be confused with rice pudding, which has none.
