Brie de Melun

Brie de Melun is the oldest and strongest of the bries. Unlike Brie de Meaux, it is curdled slowly using a very small dose of rennet, which takes nearly eighteen hours and gives it a firmer paste and a more pronounced taste.

Tips

140 µg of vitamin B9: the highest level in the database, along with Livarot. That is 70% of the reference intake per 100 g. Bloomy-rind cheeses are the champions of folate, produced by the surface moulds during maturing.

70 µg of iodine is remarkable too. Nearly half of the reference intake. Along with seafood, cheeses are a source of iodine that is often forgotten.

1.89 g of salt. Saltier than Brie de Meaux, and markedly more so than Saint-Marcellin. A 30 g portion provides 0.57 g.

It does not run, and that is not a flaw. Its paste stays firm and brittle even when ripe. That is the signature of slow curdling: anyone after a runny brie should choose a Brie de Meaux.

Raw milk. The PDO requires it. Not recommended for pregnant women or people with weakened immune systems.
