Tips

One crottin weighs 60 g: count on 191 kcal. That is a lot for a cheese swallowed in three bites. On a salad, half a crottin per person is plenty.

The drier it gets, the more concentrated it is. A very mature crottin loses its water: weight for weight, it becomes more calorific and saltier than a young one. The medium-dry version is the best compromise.

89.5 µg of vitamin B9. Like all matured goat’s cheeses, it is well supplied with folate: 45% of the reference intake per 100 g. See also Rocamadour.

Warm on a salad, it needs no added fat. Two minutes under the grill: it already releases its own fat. A light vinaigrette made with lemon is enough, with no need to load on the oil.

Raw milk. The PDO requires it. Not recommended for pregnant women or people with weakened immune systems, unless heated right through.
