Tips
9.82 g of saturated fat: the lowest of all the rillettes. Less than duck, far less than pork. On this measure, goose fat is the most favourable of the animal fats, which does not make it a diet food.
A 30 g slice on bread is worth 109 kcal. For a starter, that is still very reasonable: it is the repetition that causes the problem, not the portion.
1.29 g of salt per 100 g. Moderate, as with all rillettes, which are preserved by their fat.
They count towards the processed meat guideline. 150 g a week, all products combined.
Toasted country bread and gherkins. The acidity cuts through the fat and the toast keeps the spread thin: two details that change the balance of a starter.
