Langoustine
The langoustine is a crustacean of sandy Atlantic seabeds, caught mainly off Scotland and in the Bay of Biscay. It is neither a small spiny lobster nor a large prawn: it is a species in its own right, a cousin of the lobster.

Tips
55 µg of selenium: one portion covers the day’s need. With 141 µg of iodine, or 94% of the reference intake, its trace element profile is remarkable.
19.1 g of protein for 0.79 g of fat. An excellent ratio, on a par with the best white fish. What weighs down a langoustine always comes afterwards: butter, mayonnaise, frying.
Three minutes of cooking, no more. In a gently simmering court-bouillon or on a grill. Beyond that, the flesh turns mealy and loses its juice: this is a crustacean that does not forgive.
Keep the heads and shells. Sautéed and then covered with liquid, they make a bisque whose power is out of proportion to the effort. Otherwise you throw away half the product.
Major allergen. Crustaceans are among the fourteen allergens that must be declared, and reactions can be severe. Worth flagging when cooking for others.
