Picodon

Picodon is a small goat’s cheese from the Ardèche and Drôme, PDO. Its name comes from the Occitan picar, meaning to sting: matured for at least fourteen days, it develops a hint of acidity that becomes distinctly sharp with time.

Tips

One Picodon weighs 60 to 100 g. That is 188 to 313 kcal: a cheese to share, despite its individual size. A quarter of a Picodon on a salad is enough to transform it.

1.27 g of salt: the lowest of the PDO goat’s cheeses in this selection. Less than Crottin de Chavignol or Valençay. A 30 g portion provides 0.38 g.

The Dieulefit method changes the product. Washed in water several times during maturing, it develops a thin rind and a milder taste. This is a traditional variant, shown on the label.

It is high in cholesterol: 137 mg per 100 g. More than most cow’s milk cheeses. This no longer carries the weight once attributed to it (dietary cholesterol has little effect on blood cholesterol), but the information is worth giving.

Raw milk. Not recommended for pregnant women or people with weakened immune systems, unless heated right through.
