Tips

4,000 µg of vitamin A: five times the reference intake. A 40 g slice provides 1,600 µg. This concentration is specific to liver, the organ in which vitamin A is stored.

Not recommended in pregnancy. Vitamin A in the form of retinol is teratogenic above 3,000 µg a day: two slices are enough to pass that threshold. Pregnant women should avoid liver pâtés, as well as duck terrine.

A 40 g slice is worth 114 kcal. It is a reasonable starter, with bread and gherkins.

It counts towards the processed meat guideline. 150 g a week, all products combined, according to the Programme national nutrition santé.

Listeriosis: prefer the canned kind. An artisan pâté that has not been sterilised is a fresh product, to be eaten within three days and not recommended for people with weakened immunity.
