Rambutan
The rambutan is a South-East Asian fruit with red skin covered in soft hairs: rambut means hair in Malay. Its white, translucent flesh resembles that of the lychee, to which it is a close cousin.
In terms of nutrition facts, we need to be precise: the only measurement available is for the fruit tinned in syrup, at 82 kcal per 100 g, with 20.87 g of carbohydrate, 0.65 g of protein and 0.9 g of fibre. The syrup accounts for part of that carbohydrate. It provides 22 mg of calcium and 4.9 mg of vitamin C per 100 g.

Tips
Fresh, it is less sweet than these figures suggest. The 20.87 g of carbohydrate includes the preserving syrup. A fresh rambutan is clearly lower, but no public table measures it, and we do not make up values.
Drain it and rinse it. With a tinned fruit, this removes a real share of the added sugar. It is the most effective thing you can do.
The stone is not edible. It often clings to the flesh and contains compounds that are hard to digest. Cutting a slit around the middle lets you open the fruit and lift the flesh away cleanly.
Fresh, it keeps for a very short time. Three to four days in the fridge, and its hairs darken quickly, which does not affect the flesh.
Lychee, longan, rambutan: three cousins. They belong to the same botanical family and have similar textures. The longan is the smallest and most fragrant of the three.
