Sponge fingers (boudoir biscuits)

The sponge finger, or boudoir biscuit (biscuit à la cuillère in French), is a batter made of eggs, sugar and flour, piped and baked until it has a dry, very porous texture. This porosity is its whole purpose: it absorbs liquids without immediately falling apart.

On the nutrition side: 366 kcal per 100 g, with 74.5 g of carbohydrate, of which 48.8 g sugars, 7.75 g of protein and only 3.4 g of fat. It is a very sweet but low-fat dry biscuit, which sets it apart from most products on its shelf.

Tips

One sponge finger weighs about 7 g: count 26 kcal. That makes it a reasonable snack for a child when taken one at a time. The 366 kcal in the table only describes the whole packet.

Low in fat, very sweet: the opposite profile to a shortbread biscuit. 3.4 g of fat per 100 g, against often more than 20 g for a butter biscuit. In exchange, nearly half its weight is sugar.

It gives desserts structure without weighing them down. Charlotte, tiramisu, trifle: it replaces a buttery sponge or a shortcrust pastry with far less fat. It is the mascarpone or the cream that weigh heavily in these desserts, not the biscuit.

Dip it for a second, no more. Its porosity makes it absorb very quickly: after two seconds in coffee or syrup, it collapses. A quick in and out is enough.

It contains eggs, wheat and often milk. Three common allergens in one product, to keep in mind when preparing a dessert for a group.
