Nutritional benefits
Chicken provides lean protein, and the vegetables bring fibre and vitamins. By limiting the starting fat and leaving out the bacon, we lighten this traditional dish while keeping its richness. The long cooking tenderises it without added fat. Naturally gluten-free.
Variations and substitutions
- Alcohol-free: use a robust chicken stock.
- With bacon lardons (traditional, richer version).
- With potatoes for a complete meal.
- With white wine (coq au Riesling).
Storage and making ahead
Even better reheated; keeps for 4 days and can be frozen. A batch-cooking champion.
💡 Good to know
Long, gentle cooking tenderises the chicken and concentrates the flavours: don’t rush the simmering.
