Macarons: those small, smooth shells with their delicate frilly “feet”, sandwiched with a melting ganache. Technical but gluten-free and impressive, they take a little precision for a patisserie-worthy result.

Ingredients

Method

  1. Blitz and sift the ground almonds with the icing sugar.
  2. Whisk the egg whites, adding the sugar, until they form a stiff peak.
  3. Fold in the dry ingredients (macaronnage) until the batter is smooth and glossy.
  4. Pipe small domes, leave to form a skin for 30 minutes, bake for 14 minutes at 150 °C, then sandwich with ganache.

Nutritional benefits

Made with ground almonds, macarons are naturally gluten-free and provide the healthy fats of almonds. Small and dense, one or two are enough to treat yourself: an indulgent dessert to enjoy in reasonable amounts.

Variations and substitutions

  • Lemon, raspberry, coffee or pistachio ganache.
  • Coloured shells (natural colouring).
  • With white chocolate.
  • Intense dark chocolate version.

Storage and making ahead

Best after 24 hours in the fridge (they ‘mature’); keep for 4 to 5 days and they also freeze.

💡 Good to know

Letting the shells form a skin (drying for 30 minutes before baking) is the key step to getting the famous frilly feet.
