Ingredients
Method
- Whisk the eggs and sugar, add the zest.
- Fold in the flour, baking powder, then the melted butter.
- Rest the batter for 1 hour in the fridge (the secret of the bump).
- Fill the moulds and bake for 12 minutes at 200 °C.
Nutritional benefits
Homemade madeleines can be made with less sugar and butter than the shop-bought kind, and without additives. By replacing some of the butter with yoghurt and using semi-wholemeal flour, they become a sensible snack for children.
Variations and substitutions
- With honey.
- Dark chocolate centre.
- Lighter (half butter, half yoghurt).
- Semi-wholemeal flour.
Storage and making ahead
Keep for 4 days in a tin and can be frozen; best on the day.
💡 Good to know
