Ingredients

Method

  1. Cook the rice and warm the black beans with the cumin and a little garlic.
  2. Dice the tomatoes and the avocado.
  3. Assemble the bowls: rice, beans, sweetcorn, tomatoes and avocado.
  4. Drizzle with lime juice and add some coriander.

Nutritional benefits

This bowl is a complete, energising plant-based meal, ideal for vegetarian bulking: the combination of rice and black beans provides protein with complementary amino acids, while the beans and sweetcorn supply fibre and complex carbohydrate for lasting energy. Avocado adds good fats and tomato adds antioxidants. High in fibre and filling, it covers many nutritional needs in a single colourful, tasty bowl.

Variations and substitutions

  • Slimming: reduce the rice and increase the vegetables and salad.
  • More protein: add tofu, eggs or chicken (not vegan).
  • Spicy: chilli, jalapeños, hot sauce.
  • Burrito bowl style: add lettuce, red onion and a yoghurt sauce.

Storage and making ahead

The components keep separately for 3 days in the fridge: perfect for meal prep. Assemble when serving and add the fresh avocado (with a squeeze of lemon to stop it going brown).

💡 Good to know

Warm the black beans with cumin, garlic and a little lime juice: this small step turns a simple tinned product into a fragrant topping worthy of a real Mexican bowl.
