Nutritional benefits

Haddock is a lean fish that is high in protein and low in fat, good for cholesterol and ideal for weight loss. Poached in milk, it becomes milder (the milk tempers the saltiness from smoking) and stays tender. The steamed vegetables add fibre and vitamins. An original, light dish rich in iodine, naturally gluten-free.

Variations and substitutions

  • With a poached egg on top.
  • With spinach instead of, or as well as, the other vegetables.
  • Lactose-free: poach in stock.
  • With steamed potatoes.

Storage and making ahead

Keeps for 1 day; also nice cold, flaked into a salad.

💡 Good to know
